Acesso em: .https://bdm.ufpa.br/handle/prefix/9955Sciaenids are among the most important fishery resources for both artisanal and industrial fisheries along Brazil's northern coast, notably the pescada-gó (Macrodon ancylodon) and the *corvina-uçu* (*Cynoscion microlepidotus*)—species frequently sold side-by-side at fish markets such as the one in Bragança, Pará. This study pursued two interconnected objectives: (i) to synthesize, through a literature review, existing knowledge regarding the biology and commercial profile of these two species, the mechanisms of post-mortem deterioration in fish fillets (autolysis, microbiological degradation by psychrotrophs, and lipid oxidation), and the origin, mathematical basis, and state of the art of the Quality Index Method (QIM), focusing on the methodological challenges of applying it to fillets; and (ii) to empirically apply the QIM to compare fresh fillets of *pescada-gó* and *corvina-uçu* that had been recently caught and were being sold at the Bragança market. Twenty-six fillet samples from each species (n = 52) were analyzed using the six-attribute sensory scheme (color, mucus, odor, texture, blood, and muscle fiber arrangement; QI ranging from 0 to 14 points) described by Paiva Soares and Gonçalves (2012) and by Bonilla, Sveinsdóttir, and Martinsdóttir (2007). The total Quality Index (QI) did not differ statistically between the species (one-way ANOVA, F = 1.92; p = 0.172; means of 2.62 ± 1.63 for *Macrodon ancylodon* and 2.12 ± 0.86 for *Cynoscion acoupa*); however, there was a significant difference regarding the attributes of color (F = 4.55; p = 0.038, worse in *C. acoupa*) and muscle fiber arrangement (F = 8.79; p = 0.005, worse in *M. ancylodon*). This latter finding is consistent with the *Kudoa yasai* infestation previously described in the musculature of *M. ancylodon* sold in the same locality. It is concluded that, although both species exhibit similar overall quality at the time of sale, each deteriorates via partially distinct sensory pathways.
