Has beneficial health components by assisting the body in inhibiting free radicals that in excess cause various pathologies in humans. Phenolic compounds are one of those components that have antioxidant properties. In this way, the recovery of these bioactive compounds is very relevant for their properties and for the intensification of the exploitation of agroindustrial residues that soften the socioenvironmental damages caused by palm oil crops. The objective of this work was to evaluate the potential of palm mesocarp cake as a source of phenolic compounds and to verify optimal extraction conditions by analyzing parameters such as temperature, grain size, extraction methods and solid solvent ratio. TMD was dried and comminuted to obtain 48 mesh and 100 mesh granulometry. After the pre-treatment of the sample, an oil extraction of the TMD was carried out in Soxhlet, after which the oil obtained from the extraction and the TMD without the oil were analyzed for the phenolic content. The extraction of the phenolic compounds followed a planning, where the variables were: granulometry (48 mesh and 100 mesh), solid ratio: solvent (1:10 and 1:20), drying temperature between 60ºC and 70ºC, the use of ultrasound, because it is an alternative method of extraction and more efficient than the conventional method. The use of a hydrometanic extractor favored the extraction of the compounds, since it increases the polarity of the extractive solution. The contents of phenolic compounds were quantified by the Folin-Ciocalteu method using the spectrophotometer. For the mentioned conditions, the total phenolic contents were in the range of 0.6060 ± 0.06 EAG / gram - 4.2644 ± 0.21 mgEAG / gram of sample, demonstrating greater efficiency in the 100 mesh granulometry, in a solid ratio : solvent of 1:20, at a drying temperature of 60 ° C, and the use of ultrasound as the extraction method.
