Acesso em:.https://bdm.ufpa.br/handle/prefix/9389The search for innovative solutions has driven the growing demand for nanomaterials, due to the limitations of conventional methods for solving problems such as food spoilage and microbial resistance, which have significant financial and social impacts. In this context, scientific advances have focused on the development of efficient, sustainable, and environmentally safe materials. Emulsions represent a promising alternative, especially because they use natural raw materials. This study investigated the effect of 30 days of storage on the physicochemical properties of emulsions obtained by spontaneous emulsification, formulated with clove essential oil (CVEO) in 8/2, 7/3, and 10/0 (v/v) ratios, using canola oil as an Ostwald ripening inhibitor and Tween® 80 as a surfactant. Visual, spectroscopic, pH, and viscosity analyses were performed. The results indicated high stability throughout the evaluation period, with low pH variation, viscosity maintenance, and minimal changes in absorbance and transmittance spectra.
