In this context, tambatinga (Colossoma macropomum × Piaractus brachypomus), a hybrid of tambaqui and pirapitinga, stands out for its rapid growth, hardiness, and high environmental tolerance, characteristics that make it promising for regional fish farming. This study aimed to evaluate the yield and morphometric characteristics of tambatinga in different commercial cuts, aiming at industrial standardization and economic valorization of the product. Ten specimens with an average weight of 1.838 ± 0.141 kg, humanely slaughtered and manually processed in the laboratory, were analyzed. Weight parameters, anatomical proportions, sensory quality, and morphometric indices were evaluated. The results demonstrated an average eviscerated yield of 87.25%, with muscle bands representing approximately 60% of the total weight, in addition to high morphometric uniformity and excellent sensory quality (90% of samples classified as "excellent"). The ribs and bones showed low standard deviation, highlighting potential for standardization of cuts.
